J Nicolay Bakery opened in 2012 as a start-up bakery and café in Redding, CA. This non-traditional bakery enjoyed immediate success serving pastries as well as breakfast and lunch to a community who yearned for fresh wholesome meals with a California bistro flair. As the lines for breakfast and lunch formed out the door and around the building, founder Janelle Nicolay struggled with the desire to combine her love for animals with her love for scratch baking. She longed to create an enterprise that could reach hundreds of thousands of dog owners, their dogs, and their dogs’ friends.
The answer came in the form of turning the smash-hit café into a scratch bakery for all natural, healthy dog cookies, biscuits, bagels, and more! J Nicolay Bakery still operates out of the same successful commercial kitchen with a new target customer: our four-legged friends. The famous stuffed bagel J Nicolay Bakery has been known for has been replaced by the bacon, egg & cheese dog treat that is sure to melt in the mouth of any canine companion.
